Apple Crumble Cake – For Those With Little Time to Spare

 

When days get shorter and nights longer, I sometimes just don’t feel like spending a lot of time in the kitchen making a cake. My sister recommended me to try this super fast apple crumble cake and I couldn’t believe how easy and quick it was.

If you can get hold of ready made apple sauce, like the one sold at Lidl’s, or use apple jam and own a food processor, than this cake will only take 5 minutes in preparation. Otherwise it’s not more than 20 minutes, dependent on how quickly you can peel and chop apples.

Mum’s Apple Tea Easing Cold and Wet Winter Days

I can’t believe what difference a week makes. First we’re surprised by the most amazing Indian Summer resulting in the hottest October on record in the UK – back are the Havaianas, summer dresses and sun glasses – and the next thing I know, a week later I have to turn the heating on! I also suddenly realise how much shorter the days have become and all I want is to snuggle up with my blanket in front of the telly and sip my mum’s hot apple tea.

Apple Jam with Cinnamon – Winter Can Come!

I love making jams, as it’s the perfect way to preserve the summer and cheer me up when I’m fed up with short and dark winter days. Especially the apple-cinnamon combination is one of my favourites as it reminds me of cosy winter evenings, all snuggled up at home with one of my mum’s delicious apple strudels. Opening an apple jam jar, spreading some butter over freshly toasted bread and adding a big dollop of apple jam on top, is a quick fix for my sweet tooth as well as comfort.

Damson Plum Cake Crumble AKA Zwetschgendatschi

After an amazing stroll in Bristol’s Clifton village, I just couldn’t resist buying some more damson plums at the local greengrocers. I almost feel a bit sorry for my other half as I’ve already made several plum cakes, muffins and plum jams this autumn but haven’t had a chance to present him my favourite damson plum cake recipe from Munich, known as “Zwetschgendatschi” (Zwetschge = damson plum in German).

Anni’s Apple Pie in the Sky

This Apple Pie recipe is one of my family’s long-time favourite. My mum, sister and I know how to make it, to the delight of my father who can eat half in one go, unless we stop him and hide it. Needless to say it’s his ultimate favourite.

I know apples are available all year round and for many not one of the most exciting fruits but don’t be fooled, apples are at their best now and should be given the respect they deserve.

Yum, Yum, Damson Plum Jam

After speaking to a friend who also harvested his damson tree last weekend, I decided to hurry up with my plum recipes as 2011 looks set to be the year of the damson and I had to share this delicious damson plum jam.

Normally ready from late August and throughout September, my little buddies are in a hurry to be preserved and so am I. The fastest and most lasting solution is to turn these little gems into jam.  At first I was struck with pure horror of how to de-stone my mountain of plums. When making the plum pudding cake, I discovered my batch wasn’t going to give up their stones without a fight (they were very soft). Thinking back of my time in Munich, I remembered my mum’s secret weapon: the “Zwetschgenentsteiner”, a handy de-stoner which simultaneously semi-quarters plums.

Damson Plums Pudding Cake

Wow I can’t believe my luck. I’m utterly delighted as I’ve received 10kg of damson plums from my in-laws to be. I really love those purple little fruits which normally are the herald of autumn. They are a bit early in season this year but the warm spring and (for UK standards) hot summer, have contributed to an early harvest, just in time for my plum bonanza starting with this delicious damson plums pudding cake.

Originating from the Balkans, the home country(ies) of plum brandy (known as Šljivovica or Rakija, not for the faint hearted at 40% vol.), my recipe book is packed with delicious treats which I will share over the next weeks. Plums are very nostalgic for me as they remind me of my childhood summer holidays in Bosnia and eastern Croatia. Plum trees and big wooden barrels are a common sight this time of year, in which the over ripe plums are stored for several weeks before distilled to schnapps, the highlight of the end of summer.
